In the North

I love cities, with the exception of Belfast, which I am a bit meh about, I have never met a city I wasn’t keen on. Of course, my favourite city is the one I was born in and live in still. London is very much where my heart is, I’m happy to be a soft Southern girl and anywhere north of Watford is too far north for me.

So imagine my surprise at how much I love Northumberland, which is as north as you can go in England without being in Scotland. There’s just something about the sky and the landscape that makes me happy and content. There’s only one thing wrong with it and that’s how far away from London it is.

All this is another way of saying, look more photos from my holiday.

Frittata

or how I solved the problem of breakfast!

I have a huge problem with breakfast. I know I should eat breakfast, I know that if I get breakfast right, I’m more likely to get the rest of the day’s eating right, but I’m not a good breakfast person, I don’t eat cereal because milk is the work of the devil, I have a major issue with texture so porridge is just too much to handle first thing in the morning, I can do yogurt with granola and compote but that has a similar texture problem and it’s also quite a bit of sugar to be eating first thing in the morning. Cooked chicken breast/salmon/other cold meat and vegetables are other options but can get expensive when you’re on a budget, poached eggs, boiled and scrambled eggs have been my thing but I’m time crunched at the moment and I need something easier.

Enter the frittata. I have no idea why I didn’t think of this earlier. I used to eat frittata a lot when I lived with my uncle (there was always eggs, cheese, vegetables and bacon in that house) but I’ve gotten out of the habit. The revelation came the Saturday before last, I was dressed, had finished packing and needed to eat and sort out the fridge before Ma arrived to pick me up. I had 6 eggs and assorted vegetables. I had grated cheese in the freezer (top tip buy a big block of cheese, grate it and stick it in the freezer that way you get the cheese and avoid chopping bits of it to go straight into your mouth while you’re cooking dinner – or is that just me?).

So I made a frittata, ate some of it for breakfast and wrapped the rest up in foil for the journey and whatever. We ate a bit on the way up and the rest for breakfast the next day. I made another one halfway through the week, when we were feeling the need for vegetables and (with an apple and  a pear) it was breakfast for a couple of days. Then the lightbulb went off in my head, I could make a frittata and eat that for breakfast, with some fruit or vegetables and it would be lovely. It would make a great summery lunch with a salad because at some point soon it’s going to be summer as I remember it, warm and sunny….

I generally use an onion, a courgette, a pepper and some mushrooms because I usually have those in the house however I’ve successfully used spinach, peas, green beans, kale and any leftover veg hanging around at the time. When making this to eat for dinner have added prawns, bacon and leftover shredded chicken (not all at the same time but I guess it could work) and serving with a salad.

So here it is.

What

1 tbsp olive oil

Assorted vegetables, chopped (see above)

6 eggs

1/2 a cup of grated cheese

How

Preheat the oven to about 180°C

In a bowl whisk the eggs and  cheese together

In an ovenproof pan, heat the oil and saute the vegetables over a medium heat, until you’d be happy to eat them as they are. (if you don’t have a pan than will go from hob to oven, saute the vegetables and then put them in an oiled ovenproof dish – pyrex is the way to go!)

Turn off the heat and add the egg, mix it altogether and put in the oven for 20 to 35 minutes, until the top is slightly puffed and golden and firm in the centre.

Let it cool for 5-10 minutes and then turn out onto a plate. Eat immediately or stick it in the fridge and eat for breakfast.

Today I wanted to post about frittata, but I still can’t find the cable to my camera and I didn’t realise that until after I’d taken the photos. Which is quite frustrating.

Also today is my first day back at work and I really would like to be on this beach, especially now it’s getting warmer..

I’m back from holiday, it was just the right amount of rest, exercise and indulgence.

I love Northumberland, I love waking up to the sound of the sea, I love the sky that just seems so much bigger than it does in London, I love the coastline and the castles. I love the amazing fish and chips and the ice cream from Spurreli’s.

Sunday Music

Sweet Baby James – James Taylor

I heard this for the first time about 4 years ago..

As I recall there was a thing on the radio about albums you should listen to. They featured Sweet Baby James. The programme explained that the song was written for James Taylor’s nephew, also called James, and was composed as a lullaby for his nephew, dreamt up as he was on his way to meet his nephew for the first time. It’s also a song about James Taylor, who at the time was recovering from drug addiction and mental illness.

I should explain, at the time I was still coming to terms with the idea that I might never marry or have children and that the plans I had for doing just that were gone, also my brother and sister-in-law were thinking about having a baby. At some point over the day, I played this song and something happened. Whether it was drink, the hot weather  or something else entirely I was overwhelmed with this feeling that everything would be ok and also that one day I hold my nephew and sing him this song.  The only other time, I’ve been that certain of something has been when my Grandad died and when Stef died, when I was there to tell them it was ok to go to God. I felt that certain. So for me it was a moment when I needed to feel God and I did. Which is a lot to get out of a song!

Oliver James Dempsey was born a year and 5 months later and when he was 3 months old, Ma and I looked after him overnight and sure enough at 1am in the morning, sitting in the rocking chair, trying to get that boy back to sleep, I did sing ‘Sweet Baby James’ to him. He didn’t go back to sleep (nothing is that perfect) but I still love this song and it always reminds me of Oli and that time of knowing that sometimes if you just trust, things come right and get good, even if it’s not the way you planned….

4 years

Today, it’s been 4 years since I started blogging.

Goodness, that went fast.

So four years ago, I was living in Fulham, with my Uncle Ian and the family Hull.

I was still working at Ealing Council, I was still reeling from Stef’s death and lots of other relationships were coming apart, I wasn’t in a happy place.

I don’t know what prompted me to start blogging, and I’m not really sure why I continue. There are better writers in the world than me, there are more open people who are able, without my reserve (yes really, I’m quite reserved!), to talk about their lives and struggles and successes. However, for better or worse, here I am.

Four years on, things are very different, I live on my own and without being overly dramatic about it, I’m not sure that ‘over’ is ever a place you get to don’t think you after the death of the person you’re in love with, I am through the other side. Stef isn’t the first thing I think about in the morning and when I do think about him, it’s generally happy thoughts instead of the pain that it used to cause. After Stef died, lots of relationships that were important to me died on their feet, because I was mourning and slightly bats, it was too much for people to cope with. I’d spent a couple of years, trying to ignore how I felt and trying to be normal, that was a mistake. Anyway, relationships fell apart, I went into counseling and at some point over the last couple of years, got happy. Even when I was unemployed and depressed.

On a more cheerful note, the last 4 years have seen the arrival of Oli and Tabs

I’ve made new friends

Exercised more and just generally got on with life in all it’s fullness..

Friday Night Cocktail

Between the Sheets, when you don’t have any lemons or simple syrup..

You use lime juice and ginger syrup and I think it tastes pretty good…

What

1oz cognac

1oz cointreau

1oz white rum

1oz lime juice

1/2oz ginger syrup

How

Pour all ingredients over ice. Shake. Pour into chilled glass. Drink

Coastline

On Monday, we decided to walk. We drove to Craster and walked along the coast to Low Newton and back. It was 12km in all and the rain held off until we finished.

Pesto Chicken

This is what happens when you have spare rocket pesto and a chicken to roast.

You know about that space between the chicken breast and the skin of a chicken? You don’t?  This one..

You fill that up so that your chicken looks odd and green.  Like this

Cover the chicken with foil until about 15-20 minutes before it’s due out of the oven to let the skin brown (don’t forget to stuff half a lemon up it’s insides too!).

It’s good, keeps the breast moist and if you’re not mad keen on white meat (that would be me!) it makes the best chicken, pesto and salad sandwich. Which I ate before I thought about taking a picture and this is why I’ll never be a famous food blogger…
