Every week I make a shopping list and every week the first item is peppers. I love peppers, I eat them raw, I roast them, I stir fry them, peppers are basically my favourite, except for the green ones which are foul!
My mother is never knowingly without broccoli, for me it’s peppers (and carrots)..
Peppers are one of the ways that I prevent food waste because most leftovers are amazing if you stuff them in a pepper and bake them. I’ve stuffed peppers with cous cous salad and eaten them cold, with lentils and beans and rice and whatever has been in the fridge.
These ones were stuffed with leftover dahl.
On the weekend, before I shop, I assess the state of the leftovers in the fridge and if there’s something to stuff a pepper with, then that’s one meal I don’t have to plan, I usually eat them with green beans. It’s such an easy way of sorting out dinner, I don’t know why I didn’t think of it before…
