This week I’m making an effort to use up what’s in the freezer. Actually, that’s my plan for this month. The freezer is about ready to be defrosted again and it makes sense to use up what’s in it and then defrost it!
Breakfast
Monday to Thursday will be toast, smoked salmon and veg. The bread is homemade sourdough, both it and salmon are from the freezer.
Friday is pain au raisin day
Weekend breakfasts are less planned but probably waffles or pancakes or eggs on toast or sausage, egg, black pudding and bacon.
Lunches will be freezer soup or sprouted lentil salads
Dinners will be:
The chickpea, spinach and egg thing
Vegan Beer Chilli, although it’s not vegan by the time I’ve dumped all the cheese on it!
I only plan three meals and Friday Pizza, I like to leave one day a week free for using up leftovers etc and I’m out on Friday so that’s as far as I’ve got.
There’s yogurt and eggs and other vegetables for snacks and that’s it.
